Houjicha—sometimes spelled “hojicha”—is a roasted green tea that contains less caffeine than sencha or matcha. This signature houjicha is made from stems and leaves of Tsujiki’s tencha and is slow-roasted at a relatively low temperature to preserve the tea’s delicate flavor and aroma.
